Rocky Road Fudge Bars

Ingredients

  • ½ cup butter or margarine
  • 1 square or envelope (1 oz.) unsweetened chocolate
  • 1 cup sugar
  • 1 cup unsifted Pillsbury flour*
  • ½ cup chopped nuts
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla

Filling Ingredients

  • 6 oz. cream cheese, softened
  • ½ cup sugar
  • 2 tablespoons flour
  • ¼ cup butter or margarine, softened
  • 1 egg
  • ½ teaspoon vanilla
  • ¼ cup chopped nuts

Frosting Ingredients

  • 2 cups miniature marshmallows
  • ¼ cup butter or margarine
  • 1 square or envelope (1 oz.) unsweetened chocolate
  • 2 oz cream cheese
  • ¼ cup milk
  • 1 lb. (about 3 cups) powdered sugar
  • 1 teaspoon vanilla

Directions

  1. Preheat oven to 350°.
  2. In large saucepan, melt butter and chocolate over low heat; remove from heat.
  3. Add sugar, flour, nuts, baking powder, vanilla and eggs; mix well.
  4. Spread in greased and floured 13x9-inch pan.
  5. In bowl, combine filling ingredients; spread over chocolate mixture in pan.
  6. Bake 25 to 35 minutes or until toothpick inserted in center comes out clean.
  7. Sprinkle with marshmallows and bake 2 minutes longer.
  8. Immediately prepare frosting by combining butter, chocolate, cream cheese, and milk in saucepan.
  9. Heat over low heat until chocolate melts.
  10. Stir in powdered sugar and vanilla until smooth.
  11. Pour over marshmallows and swirl together.
  12. Cool and cut into bars.

Makes about 36 bars

*With self-rising flour, omit baking powder.

Pumpkin Spice Bars

Ingredients

  • 4 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 1 16-oz. can pumpkin
  • 2 c. flour
  • 3 tsp cinnamon
  • 1 ½ tsp baking soda
  • ¾ tsp salt
  • ¾ tsp ginger
  • ⅜ tsp cloves
  • 1 c. raisins

Directions

  1. Heat oven to 350°.
  2. Grease jelly roll pan (15 ½ x 10 ½ x 1 inch).
  3. Beat eggs, sugar, oil and pumpkin.
  4. Stir in remaining ingredients.
  5. Pour into pan and bake until light brown (25-30 minutes).
  6. Cool.
  7. Frost with cream cheese frosting.

Cream Cheese Frosting

Ingredients

  • 16 oz. cream cheese
  • 1 stick butter
  • 1 tsp vanilla
  • 3 c. (or more) powdered sugar

Directions

  1. Cream together the cream cheese and butter.
  2. Add vanilla and beat.
  3. Gradually beat in powdered sugar and mix, adding more, if necessary, to reach the desired consistency.

Chocolate Chip Delight

Ingredients

  • 1 tube (16 ½ ounces) refrigerated chocolate chip cookie dough
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup confectioners’ sugar
  • 1 carton (12 ounces) frozen whipped topping, thawed, divided
  • 3 cups cold 2% milk
  • 1 package (3.9 ounces) instant chocolate pudding mix
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • Optional: Chopped nuts, chocolate curls and miniature semisweet chocolate chips

Directions

  1. Let cookie dough stand at room temperature for 5-10 minutes to soften. Press into an ungreased 13x9-in. baking pan. Bake at 350° until golden brown, 14-16 minutes. Cool on a wire rack.
  2. In a large bowl, beat cream cheese and confectioners’ sugar until smooth. Fold in 1 ¾ cups whipped topping. Spread over crust.
  3. In a large bowl, whisk milk and pudding mixes for 2 minutes. Spread over cream cheese layer. Top with remaining whipped topping. Sprinkle with nuts and chocolate curls if desired.
  4. Cover and refrigerate until firm, 8 hours or overnight.

Stuffed Sock Snowman

What you’ll need

  • 2 long white socks
  • White string or yarn
  • Hot glue gun and hot glue
  • 2 buttons
  • Cotton stuffing or uncooked rice
  • Red or green cloth
  • 1 orange and 1 black fine tipped permanent marker

Steps

  1. Cut the top from one of the socks.
  2. Discard the top portion and turn the remaining bottom portion inside out.
  3. Fill the sock with cotton stuffing or uncooked rice.
  4. Use white string or yarn to tie off and close the open end of the sock.
  5. Tie a piece of white string or yarn around the middle of the filled sock to create the head and body of the snowman.
  6. Cut a 1 ½” wide piece of red or green fabric and tie it around the neck of the snowman to create a scarf.
  7. Cut the toe portion off of the second sock approximately halfway between the heal and the closed end of the sock.
  8. Fold up the cut end of the sock to create a hat for the snowman.
  9. Place the hat on the head of the snowman.
  10. Using black and orange fine tipped permanent markers, draw the eyes, nose, and mouth on the face of the snowman.
  11. Using hot glue, adhere two buttons to the body of the snowman.

Popsicle Stick Christmas Crafts

What you’ll need

  • Jumbo popsicle sticks
  • Scissors
  • Foam brushes
  • Glue stick
  • Yellow cardstock or craft paper
  • Brown cardstock or craft paper
  • Multicolored buttons
  • Metal ornament hook
  • Hot glue
  • Green paint or green permanent marker

Steps

  1. Paint 3 popsicle sticks with green paint or color them with a green permanent marker.
  2. Use hot glue to adhere the popsicle sticks in the shape of a triangle.
  3. Use scissors to cut out a yellow star from yellow card stock or craft paper, and hot glue it to one of the triangle corners to make the top of the tree.
  4. Use scissors to cut out a rectangle from brown card stock or craft paper, and hot glue it to the backside of the middle of the base of the triangle to make the tree trunk.
  5. Use hot glue to attach multiple colors of buttons across the front face of the tree to create the ornaments.
  6. Use hot glue to attach a hook to the backside top of the ornament.
